Mount Shadwell Cheese is based on a Mousseron style cheese. It features a sweet nuttiness combined with rich earthy notes. This cheese is somewhere between Gruyere and Raclette, but has a truly unique flavour and texture.
Mount Shadwell is located north of Mortlake, Western Victoria, just a few kilometres from the Symons cheese factory.
