Our organic coffee is a Shakiso single origin sourced from the Guji, Oromia high elevation region in Ethiopia. These beans are sourced based on the highest quality and processing standards. The coffee is processed through local washing stations and smallholder supply chains, at high elevation.
Post-harvest controls are stringent and help to prevent mycotoxins:
• careful cherry selection/sorting
• prompt processing (washed or natural processing done properly)
• controlled drying to safe moisture
• clean, dry storage (and avoiding re-wetting during transport)
• We focus on prevention and quality controls (drying, moisture, storage, defect sorting)
